Instructions
  1. In medium mixing bowl, whisk together yogurt, mayonnaise, vinegar, mustard, thyme, salt and pepper.
  2. Fold in chicken, celery, cucumber, apple and walnuts.
  3. Place 2 lettuce leaves on each plate and spoon 1/4 of chicken salad into each cup. Sprinkle with Parmesan cheese and serve.
