Hearty Quinoa Salad with Grapes and White Beans

Instructions
  1. Rinse and drain quinoa. In large saucepan, combine with broth and water. Bring to boil, reduce heat, cover and simmer 10-15 minutes. Drain any remaining liquid.
  2. To prepare dressing, combine vinegar, lemon juice, oil, garlic, honey, lemon peel, salt and pepper; mix well. Add 1/2 cup of dressing to quinoa; mix well and cool.
  3. Add grapes, pea pods, white beans, celery, cilantro and peppers to quinoa and mix well.
  4. Refrigerate until ready to serve. Serve on lettuce leaves.
